Warm Blueberry Crisp

3 c fresh or frozen blueberries
3 Tb sugar
1 Tb cornstarch
1/2 tsp cinnamon
1/4 tsp nutmeg
1/3 c old fashioned oats
1/3 c packed brown sugar
3 Tb flour
3 Tb cold butter
1. In a 9″ microwave safe dish, combine cornstarch, sugar and spices. Add blueberries and toss. Cover and microwave on high for 7-8 minutes until thickened. Stirring twice.
2. In a small dish, combine oats, sugar, flour. Cut in butter until mixture looks like coarse crumbs. Sprinkle over blueberry mixture and microwave uncovered for 3-5 minutes until butter is melted.
3. Serve with vanilla ice cream garnished with a sprinkle of cinnamon.
**Notes
1. We like the topping, so I doubled that part of the recipe. I also had to push the topping down into the juicy blueberries a bit to get it to crisp up right. The liquid from the berries helped it turn into a nicer topping.
2. This is also good with peaches. Just make sure you have 3 c of fruit in any combination. 2 c blueberries/1c peaches, etc.

MMmm, sounds yummy and easy too. I’ll have to add blueberries to my grocery list.
