Holiday Cooking Blogger Style~Marvelous Chocolate Cake

This is a super yummy cake. The frosting is a lot of work, but it’s so yummy it’s worth it.
Yield 12 servings
Cake:
2 c. flour
1 tsp. salt
1 tsp. baking powder
2 tsp. baking soda
3/4 c. cocoa
2 c. sugar
1 c. oil
1 c. milk
1 c. hot coffee
2 eggs
1 tsp. vanilla
1. Sift together dry ingredients. Add oil, milk, coffee. Mix on medium speed for 2 minutes.
Add eggs & vanilla. Beat 2 minutes more. (batter will be thin!)
2 . Pour into greased and floured 9″ round cake pans.
3. Bake 325 F. 25-30 minutes. Cool 15 minutes and remove from pans. Cool on wire racks.
Icing:
1 c. milk
5 Tb. flour
1/2 c. butter, softened
1/2 c. shortening
1 c. sugar
1 tsp. vanilla
1. Combine milk and flour in saucepan. Whisk to eliminate lumps. Cook, stirring constantly, until thick.
2. Cover and refrigerate.
3. In mixing bowl, beat butter, shortening, sugar, and vanilla until creamy. Add chilled milk/flour mixture and beat for 10 minutes.
4. Frost cooled cake.

Oh my goodness, I have a HUGE weekness for anything chocolate so this could be dangerous!

This sure sound great coffee and chocolate but if your on a diet. It may not sound so great.
