Chel’s Red Beans & Rice
by adustyframe ~ October 13th, 2007When I posted about cooking beans in the crockpot the other day, Chel said she makes red beans and rice in the crockpot.
Several requests for the recipe later, and I got an email from Chel herself!
Without further ado, here is her recipe. Can’t wait to try it!
Chel’s Red Beans & Rice
1 lb. dried red beans
1 lb ham or sausage, cut into small pieces
2 large onions, chopped
2 cloves garlic, minced
1 bell pepper, diced
1/2 c. parsley
1/2 tsp salt
1/2 tsp sugar
1 tbs Worcestershire sauce
1 bay leaf
1/2 tsp thyme
1/2 c. catsup
1 tsp Tabasco sauce
Cooked rice
* Sort the beans into a large pot and cover with water. Soak the beans overnight.
* Drain the beans & put into Crock-pot. Add remaining ingredients and cover with water. Cook until tender.
* Put beans into bowl & top with large scoop of rice.
** If you prefer your beans with a thicker consistency, remove one cup and mash or blend. Return to Crock-Pot.

Okay, now you’re making me hungry!! A great way to make your beans even richer (esp. in the winter) is to save the bones w/ scraps from your pork chops or roast before you cook them. Say you want just the meat from the pork for a recipe – bone it while it’s raw and stick the bones in the freezer. When you boil the beans, in the crock pot or on the stove, add the bones and you’d be surprised how much meat falls off! Also when you’re down to the bone of a ham – boil the living daylights out of that sucker and you’ll get a lot of ham to fall off. (Just boil the ham bone separately from the beans — the salt in it will prevent the beans from softening if you boil them together.)
You can do cool things with lentils too, like adding curry and tomatoes after they’re boiled. “Taste of Home” has good recipes and is online.

Lizzie, I am trying your recipe tomorrow and then plan to use the leftovers on Sat. to try a Rachael Ray recipe I got from http://www.foodnetworktv.com. I think it is called Creamy Spaghetti–it looked delicious! Thank you for posting Chel’s recipe, also! I will have to try that one next week. She mentioned a black bean soup crockpot recipe–could she maybe e-mail that one to me…or, maybe you should host “Lizzie’s Lunch Counter-Easy & Economical Bean Recipes Edition”
