Baked Potato Soup

How to make Baked Potato Soup:
Bake 4 large baking potatoes. Cool, then peel and cut into chunks.
(I would probably add more potatoes next time.)
While potatoes are baking, fry 10 strips of bacon. Cool and crumble.
Then, in a large pot, melt 2/3 cup butter. Add 2/3 cup flour and 1 medium chopped onion.
(I added 2 crushed cloves of garlic, because that’s what I do!)
Once butter/flour/onion mixture thickens and bubbles,
add 7 cups milk (I mixed up powdered milk and it worked great)
1 cup shredded Cheddar
8 ounces sour cream (I didn’t have any so I added 1/2 a block of fat free cream cheese)
potatoes
3/4 teaspoon seasoned salt.
Simmer for 10 minutes.
Stir in crumbled bacon, and serve immediately. .
We topped ours with more season salt and lots of coarsely ground black pepper! It’s very yummy.
The only thing that I’d do differently next time is add more potatoes and save some of the bacon for the leftovers because it’s not crisp anymore. Other than that we’re loving the leftovers.

This is almost like my recipe… It is sooo good. We like it best the second day when all the flavors meld.

I also put chopped celery in with onions…..and in the summer I add fresh corn cut off the cob…..yummy!! Pam
