I came up with this recipe last year and it’s so yummy. We had this for lunch today…mmm!

I have a tendency to do a lot of things to taste so bear with me. If you like more chicken or fewer onions that’s ok. Whatever works for you

Chicken Breasts 1/2 to 3/4 of a breast per person

1 red pepper, sliced

1 onion thinly sliced

2 garlic cloves, crushed

2 tsp oregano

2 tsp cumin

1 Tb chili powder

2 Tb olive oil

Salt & pepperĀ 

Add all items to a hot skillet and stir as it cooks. I wait to slice the chicken breasts until they are almost cooked.

When peppers and onions are soft it’s ready to eat.

I serve this on top of lettuce with a dollop of sour cream (Or plain yogurt) and shredded cheddar.

You can also put it in a tortilla instead of making it a salad.

It’s yummy and healthy and low carb by the way.
