Rhubarb Goodie
by adustyframe ~ July 30th, 2008Earlier this week, a friend shared rhubarb with me from her garden.
I dug out my Amish cookbook and made
Rhubarb Goodie
1/2 c. sugar
2 Tb flour
1/4 tsp. salt
1 tsp. cinammon
1 tsp. nutmeg
3 c. diced rhubarb
1 c. oatmeal
1 c. brown sugar
1 c. flour
1/4 tsp. baking soda
1/3 tsp baking powder
2/3 c. butter
Mix together the first sugar, flour, salt and spices. Add it to the rhubarb and toss to coat the pieces.
Put rhubarb on the bottom of a greased 9×13 pan.
Combine the rest of the ingredients until crumbly. Put this on top of rhubarb and pat it firmly.
Bake at 350 F until golden brown and a crust forms.
Serve it as is or with vanilla ice cream.
**We like more crust, so I doubled the recipe. Of course that was too much! So maybe try 1 1/2 recipes of the crust.**

You know, I haven’t seen rhubarb for a long time. It used to grow wild where I lived in Alaska. As kids we would pick it and chomp while we played. Your recipe is making me want rhubarb so badly! I might have to go do a bit more scouting.
