Easiest Pickles Ever
by adustyframe ~ July 31st, 2008Another yummy recipe from the Amish cookbook. My cucumber vine is plentiful and I’ve eaten too many cucumber sandwiches lately so I had to find something to do with them.
I’ll say that the Amish recipes aren’t the most healthy you can eat, but they sure are good!
I halved this recipe. I put everything in a Tupperware bowl and put it in the fridge. I think I’ll just add cucumber slices as I pick them from the garden. They aren’t pickled yet, but I snacked on a few and they are yummy! *Edited to add this morning–they’re even yummier!**
Refrigerator Pickles
4 c. apple cider vinegar
1 1/2 tsp. celery seeds (I didn’t have them so I skipped them!)
1 1/2 tsp. turmeric
4 c. sugar
1 1/2 tsp. mustard seeds
1/4 c. salt
This needs no boiling. Just mix ingredients, add cucumber slices and place in the fridge.
They will keep for months.
*I put 6 garlic cloves, peeled and cut in half in the brine. Super!*

Thanks for sharing this. It sounds so simple. I think I will give it a try. And, yes, some Amish use gas fridges.
