55 Ways to Use Leftovers
by adustyframe ~ October 14th, 2008I found this list in my recipe file this morning. I had compiled it ages ago and thought it may be helpful to those of us who are trying to trim the budget.
Bread~leftover or stale
1. French toast
2. Bread Crumbs
3. Stuffing
4. Bread Pudding
Dried-out Cake
5. Break into chunks and fold into whipped cream
6. Break into chunks and fold into your favorite flavor of pudding
Rice
7. Add milk, raisins, & brown sugar or honey for breakfast cereal
8. Add to soups
9. Use in hamburger or meatloaf as an extender
10. Place in a baking dish, cover with cheese sauce and grated cheese. Bake 350 for 20 minutes and serve as a side dish.
11. Freeze it to use later
Pasta
12. Freeze to use later
13. Add to soups
Bacon
14. Crumble for salad toppings
15. Freeze to use as a pizza topping
16. Use in an omelet
17. Stir into cornbread batter
18. Top a baked potato with it
19. Use in meatloaf
Ham
20. Slice for sandwiches
21. Chop & add to soup
22. Use as a baked potato topping
23. Cube & freeze to add to scalloped potatoes
Meatloaf
24. Crumble & use as hamburger
Chicken
25. Serve as sandwich meat
26. Make chicken salad
27. Freeze to use in another chicken recipe
Hard boiled Eggs
28. Crumble on a salad
29. Add to tuna salad
Scrambled Eggs
30. Wrap in a tortilla with cheese and veggies for a breakfast wrap
Carrots
31. shred for carrot cake
32. Make carrot salad
*Shred carrots, stir in raisins, walnuts, pineapple. Moisten with a small amount of
mayonnaise.
Corn
33. Add to an omelet or scrambled eggs
34. Stir into cornbread batter
35. Make creamed corn
*Puree 1 c. kernels & stir into 1-2 c. corn kernels
Cucumbers
36. Shred and add to meatballs
**Ok, I must have copied this from somewhere. I personally haven’t tried it but I don’t think it would be any different than shredding zucchini and throwing it into meat loaf. You’d probably only use 1/4-1/2 c. for 1 lb meat.
Peas
37. Add to a salad
38. Add to soups
39. Add to tuna salad
Potatoes
Boiled
40. Cube & add to soup
41. Use for potato salad
42. Use for scalloped potatoes
43. slice & fry
Mashed
44. Use to top shepherd’s pie
Fruit Juice
45. Use as a liquid for gelatin
46. Freeze in ice cube trays & use to chill fruit drinks
47. Make popsicles
Berries
48. Sprinkle over cereal
49. Use in smoothies
Cranberry Sauce
50. add 1 c. to apple crisp
Pumpkin Puree
51. Stir 1 c. into prepared vanilla pudding. Season with 1 tsp. cinnamon, 1/4 tsp. nutmeg. Chill
Milk
52. Pour into ice cube trays & freeze. Use to cool hot coffee, hot chocolate, or melt on hot cereal.
Jam
53. Melt 4 Tb jam into 1 c. Corn syrup over low heat. Use as a fruit syrup.
Cereal/Cookie Crumbs
54. Use on top of ice cream for a crunchy topping.
Roast Beef
55. Shred left over roast beef. Use it to top a baked potatoes along with cheese, green onions, and sour cream. Yummy! (Thanks to my sister for that idea.)
(This list was in some sort of order and I know the beef doesn’t quite go here, but I didn’t feel like numbering everything all over again!)

I am bookmarking this. I had a similar list a while back that dealt with leftover main dishes, primarily meats, but these other things get left over, too.

I’ve used most of these ideas! I get a lot of personal satisfaction out of using as much of what I have as possible and not wasting anything. The one that I’d never heard of was cucumbers in meatballs. Hmmm… I’m not sure about that one!

Great Ideals, On the meat loaf you can turn it into sloppy Joe’s add it to chilly.
