Untidy Josephs

My mom has a great easy recipe for Untidy Josephs. This is not very scientific. You can add more or less of any ingredient if you prefer.
Brown ground beef in any amount.
For each 1 lb of beef add
1/2 of an onion, diced
1/2 tsp. salt
1/2 tsp pepper
Drain beef. For each 1 lb of meat add
1/4 c. sweet pickle relish (or diced sweet pickles)
1 Tb brown sugar
1/4 c. ketchup (You may want more or less ketchup depending on how untidy you desire your sandwiches to be)
Stir all together and warm.
Serve on buns.
This freezes well, so make a bunch at one time and put it in the freezer for another day.
**Don’t forget the napkins!

You reminded me that my mom used to make these “open face” style by putting them on 1/2 of a hamberger bun….then sprinkling a little grated cheese on top and then putting them under the broiler for a minute…..I think I’ll have to have one soon.

I’ve never heard them called “Untidy Josephs”. Cute. My son started calling them “Happy Joes” when he was a toddler. I can’t believe you only put 1 Tbsp of brown sugar! I use at least 1/3 of a cup, but no sweet relish, and tomato sauce instead of ketchup, and no onions. Relish and onions would make them “unhappy” joes with my husband and kids.
