Amish Oatmeal Cake

My sister gave me an Amish cookbook last year–actually both sisters gave me one last year. Thankfully, they were different.

I made this cake yesterday for some friends who were coming over. It was pretty yummy and a bit different so I thought I’d share.

Oatmeal Cake

1/2 c butter

1 c. boiling water

1 c. sugar

1 c. brown sugar

1 1/2 c. flour

1 c. rolled oats

1 tsp. baking soda

pinch of salt

2 eggs

1 tsp. vanilla

1. Preheat oven to 350 F.

2. Mix together butter, boiling water, and sugars. Let set until butter melts.

3. Combine flour, oats, baking soda, and salt.

4. Add to sugar mixture. Mix.

5. Add eggs and vanilla, mix well.

6. Pour into greased  8 x 12 pan and bake 30-35 minutes.

This didn’t call for any icing, but I think it would be quite dry without it. So, I borrowed a recipe from another cake in this cookbook and it worked out quite well.

Boiled Icing

1 c. brown sugar

2 Tb butter

1/4 c. milk

1. Combine ingredients in a saucepan and boil for 2 1/2 minutes on medium heat.

2.Stir lightly after removing from heat.

3. Pour hot icing over baked cake while it’s still hot.

    OK, I see I was going to make it on April 24th, and I finally got around to it on May 19th. (Good thing I’m not that bad about putting off translations – I’d be unemployed!)

    I made it w/o the frosting, used margarine, and increased the oats by maybe 1/4 cup. It came out wonderful – even my husband loves it, and he’s not much for sweets. Thanks for posting it. Keep the easy recipes coming!

    That’s funny;) I was just thinking about it last night;). Did you think it was dry without the icing?

    I don’t condone margarine;) But I’m glad you thought it turned out well.
