German Green Beans

I didn’t try this yet, but it sounds good. It reminds me of German Potato salad–which I haven’t had in ages!

6 slices bacon

1 large onion

4 c. green beans

1 Tb cornstarch

1/4 tsp. dry mustard

2 Tb brown sugar

1 Tb vinegar

Cut bacon and into small pieces and fry. Dice onion and fry in bacon grease. Set aside. Cook green beans and drain reserving 1 c. of the cooking liquid.

Dissolve cornstarch in bean liquid. Add dry mustard, brown sugar, and vinegar and cook in saucepan until thickened. Add green beans, bacon, and onion and simmer until hot.
