Spanish Rice in the Crockpot
by adustyframe ~ October 27th, 2009The other day, I wanted to experiment to see if I could make Spanish Rice in the crockpot and it worked!
Here’s what I did for 4 servings. I think you can just double or triple it. It should work the same.
1 c. raw brown rice
3 c. mixed vegetable juice (like V-8)
1 c. water
3/4 lb hamburger, browned
1/2 medium onion, diced
1 Tb chili powder
1/2 tsp. oregano
1/2 tsp. cumin
Put all in crockpot and cook.
I put it on high because it was about 2 in the afternoon. It was ready by 6. You could put it on low if you want to cook it all day.
Next time, I’ll put some fresh garlic in it.
We served it with green pepper slices on the side.
