Ham and Egg Cups

Today was the 1st time I made it and they’re a hit!
6 slices deli ham
1/2 c. chopped green onions
2 c. shredded cheddar
6 eggs
8 oz sour cream
2 Tb parsley
Place each ham slice in a greased muffin tin. Sprinkle with onions and 1 c. of the cheese.
Beat eggs and sour cream until blended. Pour into ham (in muffin tins). Sprinkle with parsley and remaining cheese.
Bake uncovered at 350 for 25-30 minutes or until knife inserted in center comes out clean. Serve immediately.
Makes 6 servings.
**I didn’t plan ahead to make these. I was looking through recipes last night for something else and came across this. So here’s what I did differently.
1. We only made 4.
2. I just put the ham in the muffin tins and sprinkled in some cheese (didn’t measure). Just spray the tins with cooking spray rather than grease.
3. I beat the eggs with a big splash of plain yogurt (didn’t measure). I added some onion powder and some Mrs. Dash.
4. I poured them in the ham cups and realized it was enough for 5 so quickly made up another cup.
5. Sprinkle more cheese on top and bake.
Next time, I think I’ll saute some onions and green peppers to add.
James loved them which means this is a keeper! I was just happy that I got up in time to make a nice breakfast!

I am definitely going to try this as it sounds like a good alternative to a quiche! Yummy. I also love the new blog look- so clean and pretty!!

So glad you liked them! I love the way the ham gets crispy around the top. I think I’ll make them tomorrow morning–thanks for the reminder!
