Chicken Enchilada Rice
by adustyframe ~ January 20th, 2010A week or so ago, I threw together a new recipe that turned out really yummy.
I put chicken breasts in the crockpot to cook. When they were about an hour or so away from being done, I added the following:
*1 can cream of chicken soup and a can of milk
*1 can green chiles
*Crushed garlic cloves–2 (or 3 if you’re brave)
*1 can black beans (rinse and drain)
You can use more soup or use beans that you cooked if you don’t want to use canned. I was just using what was on the shelf.
Cook brown rice while the chicken is finishing.
When it’s time to eat, shred the chicken and put it back in the sauce.
Serve over brown rice and top with cheese. OR you can stir the rice into the chicken and use it to fill tortillas.
Add taco toppings and enjoy.

I have chicken in the crock pot right now and was trying to decide what to do to it. Genius! I’m totally making this for dinner tonight. Maybe with some Rotel too?
