Baked Tomatoes~Healthy Recipe

Barbara said I should share some of my healthy recipes so I will try to remember to do that once in awhile.

Some of them I’ve tweaked from other people but here goes.

I’ve been having this about every other day and it’s so good.

If you’re not working on losing weight, or if your plan allows you to have olive oil that would be a nice addition.


Baked Tomatoes

1 Fresh tomato per person–garden fresh is the best!

Basil leaves

Thin slices of onion

Garlic Clove

Salt and Pepper to taste

1. Lay basil pieces in the bottom of a baking dish. You may want to slice them thinly but I just put the whole leaves. If you put them on top of the tomatoes, you’ll have dried crunch basil–ask me how I know!

2. Layer tomato slices on top of basil. It’s fine to squish them in a bit.

3. Layer onion slices on top of tomatoes. You definitely want these to be thin and just a sliver per tomato slice.

4. Crush fresh garlic on top and spread out over the tomatoes.

5. Salt and pepper to taste.

6. Bake at 400 for 20-30 minutes.

The tomatoes will be saucy and soft. Serve next to a lean ground beef patty. You won’t miss the pasta!

*I usually sprinkle a little more salt on top of the warm tomatoes. MMM!
