Blueberry Cobbler~Healthier Version

I’ve been playing around with ingredients I’m allowed to have on my diet and came up with this.

Blueberry Cobbler~2 servings

1 1/2 c. blueberries–frozen is fine

2 Tb xylitol or sweetener of your choice

2 tsp cinnamon

1/2 tsp. nutmeg

 

Stir all together and place in glass baking dish.

Topping:

3/4 c. almond flour

2 Tb. xylitol

1/2 tsp cinnamon

2 Tb butter

Mix almond flour, xylitol, and cinnamon together. Pour over berries in glass dish. Slice butter and drop across the top of the cobbler.

Bake 375 approximately 25 minutes until berries are bubly.

 

If you want to make whip cream, here’s James’ secret diet friendly whip cream–he’s the best whip cream maker ever!

1 8 oz carton whipping cream

2-3 pkg powdered stevia

1 Tb vanilla

Whip until stiff and put on your cobbler. Mmmmm!!!
