Rhubarb Goodie

I purchased some rhubarb at the Farmer’s Market yesterday morning and today dug out my Amish cookbook to decide what to make. I decided on an old favorite.

Here’s the recipe with a few of my tweaks–

1/2 c. sugar

2 Tb flour

1/4 tsp salt

1 1/2 tsp cinnamon

1/4 tsp nutmeg

3 c. rhubarb, diced

1 c. oats

1 c. brown sugar

1 c. flour

1/4 tsp. baking soda

1/3 tsp. baking powder

2/3 c. butter

1. Mix together sugar, flour, salt and spices. Add to rhubarb and mix. Spread in the bottom of a baking pan –8×8 works pretty well.

2. Conbine the rest of the ingredients until crumble and spread on top of rhubarb. Press down firmly.

3. Bake 350 until brown and a crust forms–about 1 hour.

4. Serve with vanilla ice cream.

    I still have rhubarb in the freezer that I froze last year. It’s time to use it up! This sounds similar to a 4-berry crisp I made last week (with fresh cherries) out of Simply in Season cookbook, except it had walnuts in the topping as well. Yummy! Thanks for posting!
