Freezer Cooking Friday

My freezer cooking plans have been derailed by the need to put up produce before it spoils. That is a good thing though especially because most of it was free.

I am processing the pumpkins that grew up in my backyard. Pumpkins are quite a chore actually! I’m going to post about my process later.

I also have basil to take care of. I’m going to try an oil and herb puree that I saw in the Organic Gardening magazine. I’ll let you know how it goes.

I was given tomatoes which I canned–8 pints (hee hee) but they were free!

I did find my waffle recipe but haven’t made them yet. I also wanted to try Crystal’s chocolate chip pancakes soon. I need to make more breakfast burritos because they were a hit with Lee to take in the semi and we’ve almost used them all.

What about you? Any cooking for the freezer or produce processing going on?

    So far I have froze some of each of the following:sweet corn, yellow beans, green beans, bell peppers, banana peppers, onions; today plan to freeze some tomatoes. Oh and some strawberries. Not large amounts of any but will be nice to open in a month or so.

    I found this on pinterest
    One box angle food cake mix
    One box any other cake mix of your choice ( I choose chocolate)

    Put the dry contents of both boxes in a large zip lock bag and shake up.

    To serve put two heaping tablespoons in a cup stir in one teaspoon of water…..I then stirred it with a fork

    Microwave for 45 seconds

    It says it is zero point on weight watchers……I think it’s delicious
    And just a small single serving.

    I have been working on a project all summer to learn how to cook for the freezer. Its been very interesting. I don’t feel that I really have a lot stored in the freezer, but I have learned a lot about using leftovers and finding ways to use foods.
