Pumpkin Bars So Yummy You Won’t Miss the Grain or Sugar…

I tweaked a recipe I found online and here’s what I came up with for a healthy version of pumpkin bars. They are moist and to me seem to be a mix between pumpkin pie and pumpkin bars.

1 c. almond meal

1/2 c. xylitol

2 eggs

3/4 c. pumpkin puree

1/2 tsp. baking soda

1 tsp. cinnamon

1/4 tsp. nutmeg

1/4 tsp. cloves

 

Combine all and spread in an 8×8 lightly greased pan. Bake at 350 for 30-35 minutes.

Icing:

4 oz. cream cheese

2 Tb. butter

1/4 c. xylitol (grind in coffee grinder to make “powdered sugar”)

Mix all together and spread on cooled bars. You may top with walnuts and a sprinkle of cinnamon too! MMMMM!

 

I fed these to someone today who doesn’t eat Paleo or any other restricted diet. He said he couldn’t tell a difference between them and any other pumpkin bar. Lee and James won’t touch them however–oh well more for me!
