Clumpy Granola With My Healthy Variation

I’ve been hungry for granola the past couple of weeks. I wouldn’t call it a craving because the “wanting granola” wasn’t quite that bad. I purchased 2 boxes (in 1 week!) in the health food section at the grocery store, but that was getting expensive.

I remembered a friend mentioning a granola recipe she found and I asked her for it.

Here is the original recipe.

I changed the ingredients a bit to make it healthier. I figure if I’m going to be eating too much of it, the ingredients need to be as healthy as possible.

4 cups rolled oats

1 cup almonds, chopped

1 cup pecans, chopped

1/3 cup shredded un-sweetened coconut

1/3 cup sunflower seeds

1/2 to 3/4 teaspoon salt

1/3 c. flax seeds

6 tablespoons coconut sugar

1/4 cup real maple syrup

2 tablespoons honey

1 teaspoon vanilla

1/4 cup coconut oil

 

I followed the original baking directions. This stuff is yummy and my healthy changes don’t affect the yummy quotient! James loves it and I’ve never seen him scarf down granola.
